Blackened Mahi Sandwiches with Lemon Truffle Aioli

Thaw and prep Mahi according to package instructions.  Cut Mahi fillet into uniform 1in x 2in pieces. Dry thoroughly with a paper towel then coat all sides with blackening seasoning.  Bring pan to medium high heat and coat with avocado oil.  Place Mahi in the pan and cook on all sides for about 1-2 minutes each side.  Remove from the pan and set aside.  Prepare sandwiches by coating the inside of the roll with aioli then adding fish, avocado slices, red onion and  arugula.  Serve immediately.
